For the Bagels
  • 1 1/4 cups bread flour Higher in protein than all-purpose flour, enabling the dough to rise beautifully.
  • 2 tsp baking powder Helps the bagels rise wonderfully.
  • 1/2 tsp salt Vital for flavor.
  • 1 cup yogurt Plain Greek yogurt is recommended for moisture and protein.
  • 1 large egg Adds richness and serves as the egg wash.
  • 1/2 tsp granulated sugar Helps with browning when brushing the bagels.
  • everything bagel seasoning (optional) Adds flavor and a classic bagel vibe.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the bread flour, baking powder, and salt until combined.
  3. In a small bowl, whisk the egg with the granulated sugar until well blended.
  4. Create a well in the center of the dry ingredients and add the yogurt. Mix until a shaggy dough forms.
  5. Transfer the dough onto a lightly floured surface and knead for 1-2 minutes until smooth.
  6. Divide the dough into 4 equal pieces. Roll each piece into a ball, then flatten to about 1/2-inch thick to form bagels.
  7. Place the bagels on the prepared baking sheet. Brush each bagel with the egg wash and sprinkle with everything bagel seasoning if desired.
Baking
  1. Bake for 27-30 minutes until golden brown and sound hollow when tapped on the bottom.
  2. Let the bagels cool for 5 minutes on the baking sheet before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days. For longer storage, freeze them and toast straight from frozen. You can prepare the dough a day in advance and store it in the fridge covered.
