Preparation
- Cut the cold butter into 1/2-inch cubes and place them in the freezer.
- Preheat your air fryer to 355°F (about 180°C).
- In a large bowl, combine all-purpose flour, sugar, baking powder, and salt.
- Add the cold butter cubes to the flour mixture and work in until it resembles coarse breadcrumbs.
- Toss in the minced thyme and mix gently to distribute.
- In another bowl, whisk together heavy cream and vanilla extract. Pour into the dry ingredients.
- Fold in diced strawberries until just combined; avoid overmixing.
- Shape the dough into a 1-inch-thick circle and cut into 8 wedges.
Cooking
- Place parchment paper in the air fryer basket and arrange scones on top.
- Mix remaining heavy cream with a little water and brush tops of scones. Dust with sugar.
- Air fry for 10 to 14 minutes or until golden brown.
- Transfer the scones to a cooling rack and let cool for 5 to 10 minutes before serving.
Notes
Serve with clotted cream or butter. For presentation, dust with powdered sugar and add a sprig of thyme.
