  • 1 1/4 cups all-purpose flour Feel free to try whole wheat for a healthier alternative.
  • 3 tbsp sugar Adjust to your taste; coconut sugar is a great substitute if you’re looking for something more natural.
  • 1/2 tbsp baking powder Make sure it’s fresh for the best rising effect.
  • 1/4 tsp salt Balances the sweetness.
Wet Ingredients
  • 4 tbsp butter (cold and cut into 1/2-inch cubes) Use high-quality butter for the best flavor.
  • 1 tsp thyme (freshly minced) Fresh thyme is a must.
  • 1/2 cup + 1 tbsp heavy cream Consider substituting with Greek yogurt for a lighter option.
  • 1/4 tsp vanilla extract Pure vanilla enhances the flavors wonderfully.
Fruits
  • 4 oz strawberries (finely diced) Fresh is always best, but you could use frozen if necessary.

Method
 

Preparation
  1. Cut the cold butter into 1/2-inch cubes and place them in the freezer.
  2. Preheat your air fryer to 355°F (about 180°C).
  3. In a large bowl, combine all-purpose flour, sugar, baking powder, and salt.
  4. Add the cold butter cubes to the flour mixture and work in until it resembles coarse breadcrumbs.
  5. Toss in the minced thyme and mix gently to distribute.
  6. In another bowl, whisk together heavy cream and vanilla extract. Pour into the dry ingredients.
  7. Fold in diced strawberries until just combined; avoid overmixing.
  8. Shape the dough into a 1-inch-thick circle and cut into 8 wedges.
Cooking
  1. Place parchment paper in the air fryer basket and arrange scones on top.
  2. Mix remaining heavy cream with a little water and brush tops of scones. Dust with sugar.
  3. Air fry for 10 to 14 minutes or until golden brown.
  4. Transfer the scones to a cooling rack and let cool for 5 to 10 minutes before serving.

Notes

Serve with clotted cream or butter. For presentation, dust with powdered sugar and add a sprig of thyme.
