Almond Croissants

Deliciously flaky almond croissants filled with a sweet almond paste and topped with sliced almonds, perfect for breakfast or a snack.

Ingredients
  

For the Almond Filling
  • 4 large large croissants, preferably at least 1 day old Use day-old croissants for better absorption of filling.
  • 4 Tablespoons unsalted butter, softened to room temperature Choose fresh, high-quality butter for the best flavor.
  • 1/4 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon almond extract I recommend Nielsen-Massey for its rich flavor!
  • 3/4 cup almond flour Bob’s Red Mill is my go-to brand.
  • 1 Tablespoon granulated sugar For simple syrup.
  • 1.5 Tablespoons water For simple syrup.
  • 1/2 teaspoon almond extract For added flavor in the filling.
  • 2 Tablespoons sliced almonds For topping.
  • 1-2 Tablespoons confectioner's sugar For dusting, optional.

Method
 

Preparing the Filling
  1. In a mixing bowl, combine the softened butter, almond flour, granulated sugar, egg, and 1 teaspoon of almond extract. Mix until smooth.
  2. Add 1/2 teaspoon of almond extract for an extra layer of flavor, mix well, and set aside.
Preparing the Syrup
  1. In a small saucepan, combine 1 tablespoon of granulated sugar and 1.5 tablespoons of water. Heat on low, stirring until the sugar has dissolved. Set aside to cool.
Assembling the Croissants
  1. Preheat the oven to 375°F (190°C).
  2. Slice each croissant in half lengthwise, creating a pocket.
  3. Generously spread the almond paste inside each croissant pocket.
  4. Brush the tops of each croissant lightly with the cooled syrup, then sprinkle with sliced almonds.
  5. Place the croissants on a lined baking sheet and bake for about 15-17 minutes, or until golden and crispy.

Notes

Store leftovers in an airtight container at room temperature for 1-2 days or refrigerate for up to 4 days. You can prepare the almond filling a day ahead.
