  • 3 tablespoons unsalted butter, melted Make sure it’s at room temperature for easy mixing.
For the Crumb Topping
  • 1/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/3 cup quick-cooking oats Go for the quick-cooking variety for a better crunch.
  • 3/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg Adds a sweet warmth to the topping.
  • 2 1/2 tablespoons unsalted butter, melted
For the Apple Filling
  • 2 medium-small apples, peeled and chopped I recommend using Granny Smith for tartness.
  • 2 teaspoons freshly squeezed lemon juice
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons light brown sugar
  • 1 1/2 teaspoons cornstarch This will help thicken the filling.
For the Cheesecake Filling
  • 10 oz cream cheese, softened Ensure it's at room temperature for smooth mixing.
  • 6 tablespoons sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons all-purpose flour
For Serving

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs, cinnamon, sugar, and melted butter. Press this mixture firmly into the bottom of 9 cupcake liners placed in a muffin tin. Refrigerate while preparing the next steps.
Prepare the Crumb Topping
  1. In another bowl, combine the flour, sugar, oats, cinnamon, and nutmeg. Stir in the melted butter until it resembles coarse crumbs. Refrigerate until needed.
Make the Apple Filling
  1. In a medium bowl, toss the chopped apples with lemon juice, cinnamon, nutmeg, cornstarch, and sugar. Set this aside to allow the flavors to meld.
Prepare the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese with sugar, vanilla, and flour until smooth. Add in the egg and mix just until combined—avoid overmixing!
Assemble the Cheesecakes
  1. Spoon the cheesecake filling over the graham cracker crusts, filling each cup about 2/3 full. Add a tablespoon of the apple mixture on top, pressing down slightly. Finally, top generously with the crumb mixture.
Bake
  1. Bake for 28-30 minutes or until the edges are set, and the centers are slightly jiggly. Allow them to cool for about 15 minutes, then transfer to the refrigerator to chill for at least 2 hours.
Serve
  1. Drizzle with caramel sauce and enjoy these heavenly bites chilled.

Notes

Choose organic apples if possible for the best flavor. You can substitute the graham crackers with digestive biscuits or Oreos for a fun twist.
