Ingredients
  

For the filling
  • 6 to 7 medium apples 6 to 7 medium apples, about 2 to 2.5 pounds, peeled or unpeeled, cored, and sliced into 1/2 inch pieces Mix of tart and sweet apples recommended
  • 2 tablespoons 2 tablespoons lemon juice Adds brightness to apple filling
  • 1/3 cup 1/3 cup granulated sugar Adjust to taste
  • 1 teaspoon 1 teaspoon ground cinnamon
  • 1/4 teaspoon 1/4 teaspoon ground nutmeg or cardamom Optional spice selection
  • 1 tablespoon 1 tablespoon cornstarch Thickens filling
For the crumble topping
  • 1 cup 1 cup old fashioned rolled oats
  • 3/4 cup 3/4 cup all purpose flour
  • 1/2 cup 1/2 cup light brown sugar, packed
  • 1/2 teaspoon 1/2 teaspoon fine salt
  • 1/2 cup 1/2 cup unsalted butter, cold and cut into small cubes Keeps the topping crispy
  • 1/2 cup 1/2 cup chopped pecans or walnuts Optional for extra crunch

Method
 

Preparation
  1. Heat the oven to 350°F and lightly butter a 9 inch square baking dish or similar.
  2. Toss apples with lemon juice, granulated sugar, cinnamon, nutmeg, and cornstarch. Spread in the dish.
  3. In a bowl, mix oats, flour, brown sugar, and salt. Rub in the cold butter with your fingertips until crumbly with some pea sized bits. Stir in nuts if using.
  4. Scatter the crumble evenly over the apples. Do not press it down too hard.
  5. Bake for 40 to 45 minutes until the top is deep golden and the apples are bubbling at the edges.
  6. Cool for 10 to 15 minutes before serving.

Notes

Serve warm with vanilla ice cream, whipped cream, or a splash of cold heavy cream. For make-ahead options, assemble filling and topping separately and refrigerate, bake within 24 hours.
