- In a large bowl, mash the drained chickpeas using a fork or potato masher until the mixture is chunky, not puréed.
- Fold in the diced apple and chopped pecans into your chickpea base, combining well.
- In a separate bowl, whisk together the tahini and lemon juice until smooth. This will create a creamy dressing.
- Pour the tahini mixture over the chickpea blend. Stir gently, adding salt and pepper to taste.
- Spread the salad generously on your bread of choice. Add lettuce leaves if using, and then top with another slice of bread.
Notes
Let the salad sit for about 10 minutes before serving to allow the flavors to meld. Store in an airtight container in the fridge for up to three days.
