  • 1 cup Apple, diced Choose a firm, crisp apple like Honeycrisp or Granny Smith.
  • 0.5 cup Red Onion, thinly sliced Soak slices in cold water for about 10 minutes to mellow flavor.
  • 0.25 cup Walnuts, chopped Toast lightly in a dry pan for enhanced flavor.
Dressing Ingredients
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper Adjust to your taste preference.

Preparation
  1. Rinse baby spinach under cold water, pat dry, and place in a large mixing bowl.
  2. Dice apples into bite-sized pieces and toss with a little lemon juice to prevent browning.
  3. Thinly slice the red onion for contrast in color and flavor.
  4. Chop walnuts and lightly toast them in a dry skillet over medium heat for about 5 minutes.
Make the Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  2. Taste-test and adjust flavors if necessary.
Combine the Salad
  1. In the bowl of spinach, add diced apples and sliced red onion.
  2. Drizzle the dressing on top.
Toss and Serve
  1. Gently toss everything together using tongs or a salad fork.
  2. Sprinkle toasted walnuts on top right before serving.
