Preparation
- Thinly shred the green cabbage, slice the radishes, and chop the tomato or red bell pepper. Slice the red onion.
- Warm the refried black beans on the stove or in the microwave until they're slightly steaming.
Assembly
- Cut the sandwich rolls in half. Optionally, scoop a small amount of soft bread from the inside of the top slice.
- Spread the warmed refried black beans over the bottom half of each roll.
- Layer on the sliced avocados, followed by radishes, red onion, and cabbage.
- Spread your choice of sriracha cashew cream or cilantro lime cashew sour cream on the top half of the rolls.
- Squeeze fresh lime juice over the filling.
- Place the top half of each roll over the fillings and press lightly.
Notes
Best enjoyed fresh, but can be stored separately for up to 3 days. For flavor, let ingredients sit at room temperature before serving.
