Ingredients
  

Fresh Vegetables
  • 1.5 cup green cabbage, thinly shredded Use fresh and ripe ingredients for the best flavor.
  • 1 large tomato or red bell pepper, seeded and chopped Either works well in this recipe.
  • 2 large radishes, thinly sliced Adds crunch and freshness.
  • 1 large red onion, thinly sliced Can adjust based on preference.
  • 1 to 2 limes, for squeezing Enhances flavor profile.
Main Ingredients
  • 1 can (15 oz) vegan refried black beans, warmed or at room temp Provides a hearty base.
  • 1 to 2 avocados, pitted, peeled, and sliced Ensure they are ripe.
  • 3 pieces crusty or soft sandwich rolls, split Choose your preferred type.
  • Sriracha cashew cream or cilantro lime cashew sour cream to taste for spreading Adds flavor and creaminess.
  • to taste hot sauce, optional For extra heat, if desired.

Method
 

Preparation
  1. Thinly shred the green cabbage, slice the radishes, and chop the tomato or red bell pepper. Slice the red onion.
  2. Warm the refried black beans on the stove or in the microwave until they're slightly steaming.
Assembly
  1. Cut the sandwich rolls in half. Optionally, scoop a small amount of soft bread from the inside of the top slice.
  2. Spread the warmed refried black beans over the bottom half of each roll.
  3. Layer on the sliced avocados, followed by radishes, red onion, and cabbage.
  4. Spread your choice of sriracha cashew cream or cilantro lime cashew sour cream on the top half of the rolls.
  5. Squeeze fresh lime juice over the filling.
  6. Place the top half of each roll over the fillings and press lightly.

Notes

Best enjoyed fresh, but can be stored separately for up to 3 days. For flavor, let ingredients sit at room temperature before serving.
