  • 2 tbsp olive oil Use high-quality extra virgin olive oil for best taste.
  • 2 tbsp balsamic vinegar Opt for aged balsamic for richer flavor.
  • 1 tbsp soy sauce Tamari is a great gluten-free alternative.
  • 4 cloves garlic, minced Fresh is key! Avoid pre-minced garlic.
  • 1/2 tsp black pepper Freshly cracked is best.
  • 1/4 tsp salt Adjust according to taste.
  • to taste fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or lightly grease it with olive oil.
  3. In a large mixing bowl, combine olive oil, balsamic vinegar, soy sauce, minced garlic, black pepper, and salt. Mix well.
  4. Toss the mushrooms into the bowl, ensuring they are thoroughly coated in the sauce.
  5. Spread the mushrooms onto the prepared baking sheet in a single layer.
  6. Roast in the oven for about 20-25 minutes, stirring halfway through, until golden and tender.
  7. Remove from the oven and garnish with fresh parsley before serving.

Notes

Timing can vary based on mushroom size. Store leftovers in an airtight container in the fridge for up to 3 days. Can be reheated in the oven.
