Ingredients

Main Ingredients
  • 1/3 cup chia seeds For optimal nutrition, look for organic chia seeds.
  • 1.25 cups full-fat canned coconut milk Using full-fat coconut milk adds creaminess.
  • 3 tbsp maple syrup Pure maple syrup enhances sweetness—avoid imitation syrups.
  • 1 tsp vanilla essence Choose high-quality vanilla extract for a richer taste.
  • 1 mashed banana Look for bananas with a few brown spots as they’re the sweetest.
  • 1/2 tsp cinnamon Ground cinnamon pairs beautifully with bananas.
  • 1/8 tsp ground nutmeg Nutmeg adds a subtle spice that is comforting.

Method

Preparation
  1. Peel and mash the banana in a bowl until completely smooth.
  2. To the mashed banana, add the chia seeds, coconut milk, maple syrup, vanilla essence, cinnamon, and nutmeg. Whisk together for 1-2 minutes until fully combined.
  3. Let the mixture sit for 5-10 minutes to allow the chia seeds to expand.
  4. Transfer the mixture to an airtight container and refrigerate for at least 2 hours.
Serving
  1. Before enjoying, give the pudding a gentle stir and serve topped with granola, fresh fruit, or nuts.
