Preparation
- Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- In a large bowl, combine rolled oats, baking powder, salt, and cinnamon.
- In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract until frothy.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the mixed berries and chopped almonds without smashing them.
- Transfer the mixture to the prepared baking dish and spread it evenly.
Baking
- Bake for 30-35 minutes or until the top is golden brown and the center is set.
- Let it cool slightly before slicing into squares and serving warm.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. This can be made ahead by preparing the night before (just don’t bake it) and baking in the morning.
