  • 2 cups rolled oats Look for certified gluten-free if needed
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon Optional, highly recommended for cozy flavor
Wet Ingredients
  • 2 cups milk Or any milk alternative like almond, oat, or coconut milk
  • 2 units eggs Room temperature preferred
  • 1/4 cup maple syrup or honey Choose pure, organic maple syrup for best flavor
  • 1 teaspoon vanilla extract Pure extraction is best
Add-ins
  • 1 cup mixed berries Fresh or frozen; ensure they are sweet and ripe
  • 1/2 cup almonds, chopped Slivered almonds will give a nice crunch too

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. In a large bowl, combine rolled oats, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract until frothy.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the mixed berries and chopped almonds without smashing them.
  6. Transfer the mixture to the prepared baking dish and spread it evenly.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown and the center is set.
  2. Let it cool slightly before slicing into squares and serving warm.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. This can be made ahead by preparing the night before (just don’t bake it) and baking in the morning.
