For the Beef Marinade
  • 8 ounces beef sirloin Look for grass-fed or organic beef to enhance flavor and quality.
  • 2 tablespoons soy sauce Choose low-sodium soy sauce if you prefer less salt.
  • 1 tablespoon oyster sauce Adds a sweet, savory depth.
  • 1 tablespoon sesame oil For a nutty flavor; use toasted sesame oil for a stronger taste.
  • 1 tablespoon cornstarch Helps tenderize the beef.
  • 1 teaspoon black pepper Freshly cracked black pepper will pack more flavor than pre-ground.
For the Noodles and Vegetables
  • 8 ounces udon noodles Fresh is best, but dried noodles work too.
  • 2 tablespoons vegetable oil For stir-frying.
  • 3 cloves garlic, minced Fresh garlic contributes brightness.
  • 1 medium onion, sliced A great base for flavor.
  • 1/2 cup beef broth Homemade or low-sodium versions are best.

Method
 

Preparation
  1. Thinly slice the beef sirloin into strips and place them in a bowl.
  2. Add soy sauce, oyster sauce, sesame oil, cornstarch, and black pepper to the beef. Mix well and let marinate for at least 15 minutes.
  3. While the beef marinates, cook the udon noodles according to package instructions. Drain and set aside.
Cooking
  1. In a large pan or wok, heat vegetable oil over medium-high heat.
  2. Add minced garlic to the pan and stir-fry for about 30 seconds until fragrant.
  3. Add the marinated beef to the pan in a single layer. Let it sear for 1-2 minutes without stirring, then flip to cook the other side.
  4. Incorporate sliced red and green bell peppers and onion. Stir-fry for another 2-3 minutes until the vegetables are slightly tender.
  5. Pour in the beef broth and allow it to come to a simmer.
  6. Add the cooked udon noodles to the pan, tossing everything together. Cook for an additional 1-2 minutes until heated through.
  7. Sprinkle chopped green onions on top before serving.

Notes

For an elegant touch, serve with miso soup and steamed edamame or baby bok choy.
