Ingredients
  

For the Salad
  • 2 cups Fresh blackberries Look for ripe, juicy berries with a deep color.
  • 1 large Buttery avocado Choose one that is just slightly soft to the touch for ultimate creaminess.
  • 4 cups Spicy arugula Any fresh greens could work, but arugula adds a unique peppery flavor.
  • ½ cup Candied pecans You can either make your own or buy pre-packaged.
For the Vinaigrette
  • 2 tbsp Honey Use raw honey if possible for better flavor and health benefits.
  • 1 lemon Lemon juice (from 1 lemon) Freshly squeezed lemon juice truly enhances the salad.
  • to taste Salt I recommend sea salt for a more refined flavor.
  • to taste Pepper Freshly ground black pepper will add a lovely kick.

Method
 

Preparation
  1. Wash the blackberries gently under cold water and pat them dry.
  2. Slice the avocado in half, remove the pit, and scoop out the flesh.
  3. Cut the avocado into bite-sized cubes and sprinkle a little lemon juice on the cubes to avoid browning.
Combine the Salad
  1. In a large bowl, combine the fresh blackberries, diced avocado, and spicy arugula gently.
Make the Vinaigrette
  1. In a small bowl, whisk together the honey, freshly squeezed lemon juice, salt, and pepper until fully mixed.
Dress and Serve
  1. Drizzle the vinaigrette over the salad and gently toss to combine.
  2. Top the salad with crumbled goat cheese and optional candied pecans. Serve it immediately.

Notes

Ensure all your salad ingredients are at room temperature for the best flavor. If you’re vegan, simply replace goat cheese with cashew cheese or omit it entirely.
