For the Crust
  • 1 each homemade pie crust (or 2 unbaked store-bought pie crusts) Use homemade for deeper flavor or store-bought when short on time.
  • 1 large egg (room temperature, beaten) Gives the crust a golden shine.
For the Filling
  • 6 cups fresh blackberries Look for plump, shiny berries.
  • 1/2 cup granulated sugar Adjust according to the tartness of your berries.
  • 1/4 cup all-purpose flour Helps thicken the filling.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Roll out one of your pie crusts into a 12-inch circle and place it into a 9-inch pie pan.
  3. In a large mixing bowl, toss your fresh blackberries with sugar and flour until well coated.
  4. Pour the blackberry mixture into the prepared pie crust evenly.
  5. Roll out the second crust and drape it over the pie. Seal edges by crimping.
  6. Brush the top crust with the beaten egg and cut slits for venting.
  7. Bake for 15 minutes, then lower the temperature to 375°F (190°C) and continue baking for 35-40 minutes.
  8. Allow the pie to cool for at least 30 minutes before cutting.

Notes

For a perfectly flaky crust, ensure butter is cold when making dough. Serve with whipped cream or ice cream for extra delight.
