  • 1 cup fresh blueberries Look for plump, juicy ones that are in season.
  • 1 teaspoon vanilla extract Pure vanilla extract will make your pudding shine.

Preparation
  1. In a mixing bowl, combine the chia seeds, almond milk, honey or maple syrup, and vanilla extract. Whisk until everything is well incorporated.
  2. Let it sit for about 5 minutes to allow the chia seeds to start absorbing the liquid.
  3. Stir the mixture again to distribute the seeds evenly and prevent clumping. Adjust sweetness if desired.
  4. Cover the bowl and refrigerate for at least 2 hours, or overnight.
Serving
  1. Once thickened and creamy, layer your chia pudding with fresh blueberries in small jars or cups.
  2. Chill it for a bit and then serve. Drizzle with more honey or sprinkle with granola for added texture.

Notes

This pudding can be stored in the fridge for up to 5 days. Consider freezing individual servings in airtight containers for up to 3 months.
