Ingredients

Main Ingredients
  • 3 cups blueberries Fresh preferred
  • 2 teaspoons lemon zest For brightness
  • 1/4 cup granulated sugar (divided) Use for blueberry filling
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar (divided) Use additional on top
  • 2 1/2 teaspoons baking powder Acts as a leavening agent
  • 3/4 teaspoon salt
  • 1 1/2 cups milk Adds moisture
  • 1 teaspoon vanilla extract
  • 12 tablespoons unsalted butter (divided) Melt some and brown others
Pro-Note
  • For the freshest blueberries, consider picking them yourself or visiting a local farmer’s market.
  • Using unsalted butter allows for better control over saltiness; browning enhances flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and melt 4 tablespoons of butter in a 9 x 13-inch pan.
  2. In a small saucepan over low heat, brown the remaining 8 tablespoons of butter until it takes on a rich, nutty aroma.
Filling & Batter
  1. For the blueberry filling, combine fresh blueberries, lemon zest, and 1/4 cup of sugar in a medium bowl, gently folding to combine.
  2. In another bowl, whisk together flour, baking powder, salt, and 1 1/2 cups of sugar; gradually mix in milk and a splash of vanilla until smooth.
Assembly & Baking
  1. Pour the batter over the melted butter in the pan, making sure not to stir. Spoon the prepared blueberries on top evenly.
  2. Finish by sprinkling the additional 2 tablespoons of sugar over the top before baking for 45-50 minutes or until golden and bubbly.
Serving
  1. Allow it to cool for about 10 minutes to set, then serve warm, optionally with a scoop of vanilla ice cream.

Notes

Consider serving in individual ramekins for a charming presentation. Pairs beautifully with lemonade or sweet tea.
