  • ½ cup oat flour or all-purpose flour Whole oat flour adds fiber; all-purpose flour also works.

  • 1 cup fresh or frozen blueberries Fresh berries add juicy bursts, but frozen works well too.

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and cinnamon until well combined.
  3. Stir in the milk, then add the oat flour and baking powder, mixing until smooth.
  4. Gently fold in the blueberries.
  5. Pour the batter into the greased baking dish and level it out with a spatula.
  6. Bake for 30-35 minutes, or until the edges are golden and the center is firm to the touch.
  7. Let it cool slightly before serving. Enjoy warm or chilled.

Notes

For storage: Once cooled, store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. For make-ahead, prep the batter the night before and bake in the morning.
