- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a mixing bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, and cinnamon until well combined.
- Stir in the milk, then add the oat flour and baking powder, mixing until smooth.
- Gently fold in the blueberries.
- Pour the batter into the greased baking dish and level it out with a spatula.
- Bake for 30-35 minutes, or until the edges are golden and the center is firm to the touch.
- Let it cool slightly before serving. Enjoy warm or chilled.
Notes
For storage: Once cooled, store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months. For make-ahead, prep the batter the night before and bake in the morning.
