Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
- In a large bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, baking powder, cinnamon, and a pinch of salt until well-combined.
- Gently fold in the rolled oats and blueberries, being careful to keep the berries intact.
- Pour the mixture into the greased baking dish, smoothing the top with a spatula.
Baking
- Bake for 30-40 minutes, or until the center is puffed and set with a lightly golden top. Use a toothpick to check for doneness; it should come out clean.
- Allow the bake to cool slightly before serving. It can be enjoyed warm or chilled.
Notes
For a golden, crisp top, broil the bake for an additional minute after it’s fully cooked. Store leftovers in an airtight container in the refrigerator for about 4-5 days, or freeze individual portions for meal prep.
