  • 1/3 cup honey or maple syrup Choose pure maple syrup for depth of flavor.
  • 1 teaspoon vanilla extract Look for pure vanilla extract for the best taste.
  • 1 teaspoon baking powder Ensure it’s fresh for proper rising.
  • 1/2 teaspoon cinnamon A warm and cozy addition.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish.
  2. In a large bowl, whisk together the cottage cheese, eggs, honey (or maple syrup), vanilla extract, baking powder, cinnamon, and a pinch of salt until well-combined.
  3. Gently fold in the rolled oats and blueberries, being careful to keep the berries intact.
  4. Pour the mixture into the greased baking dish, smoothing the top with a spatula.
Baking
  1. Bake for 30-40 minutes, or until the center is puffed and set with a lightly golden top. Use a toothpick to check for doneness; it should come out clean.
  2. Allow the bake to cool slightly before serving. It can be enjoyed warm or chilled.

Notes

For a golden, crisp top, broil the bake for an additional minute after it’s fully cooked. Store leftovers in an airtight container in the refrigerator for about 4-5 days, or freeze individual portions for meal prep.
