For the Crumble Layer
  • 1 cup old-fashioned rolled oats Works best for hearty texture.
  • 1 cup all-purpose flour Use unbleached for a wholesome option.
  • 1/2 cup brown sugar Adds a lovely caramel flavor.
  • 1/2 cup unsalted butter, melted Use high-quality butter for richness.
  • 1/2 tsp baking powder Helps the crumble layer rise.
  • 1/4 tsp salt Balances the sweetness.
For the Cream Cheese Layer
  • 8 oz cream cheese, softened Must be at room temperature.
  • 1/2 cup granulated sugar Sweetens the cream cheese layer.
  • 1 tsp vanilla extract Elevates the flavor.
For the Topping
  • 2 cups fresh blueberries Preferably organic for best flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with butter or baking spray.
  2. In a large mixing bowl, combine 1 cup oats, 1 cup flour, 1/2 cup brown sugar, 1/2 cup melted butter, 1/2 tsp baking powder, and 1/4 tsp salt. Stir until evenly mixed.
Forming Layers
  1. Press half of the crumble mixture into the bottom of the prepared baking dish to create a solid crust.
  2. In another bowl, beat together 8 oz softened cream cheese, 1/2 cup sugar, and 1 tsp vanilla extract until smooth, about 2-3 minutes.
  3. Spread the cream cheese mixture over the crust. Top with 2 cups blueberries, pressing them in gently, then sprinkle the remaining crumble mixture on top.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until the topping is golden brown and the blueberries are bubbling.
  2. Allow to cool completely on a wire rack, then slice into bars.

Notes

These bars can be made in advance and frozen. They last well in the fridge for up to 5 days. Avoid adding too many blueberries to prevent sogginess.
