Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with butter or baking spray.
- In a large mixing bowl, combine 1 cup oats, 1 cup flour, 1/2 cup brown sugar, 1/2 cup melted butter, 1/2 tsp baking powder, and 1/4 tsp salt. Stir until evenly mixed.
Forming Layers
- Press half of the crumble mixture into the bottom of the prepared baking dish to create a solid crust.
- In another bowl, beat together 8 oz softened cream cheese, 1/2 cup sugar, and 1 tsp vanilla extract until smooth, about 2-3 minutes.
- Spread the cream cheese mixture over the crust. Top with 2 cups blueberries, pressing them in gently, then sprinkle the remaining crumble mixture on top.
Baking
- Bake in the preheated oven for 30-35 minutes or until the topping is golden brown and the blueberries are bubbling.
- Allow to cool completely on a wire rack, then slice into bars.
Notes
These bars can be made in advance and frozen. They last well in the fridge for up to 5 days. Avoid adding too many blueberries to prevent sogginess.
