Preparation
- Preheat the oven to 350°F (175°C).
- Prepare an 8-inch square baking pan by greasing it or lining with parchment paper.
- In a large bowl, combine oats, flour, brown sugar, and salt until well mixed.
- Pour in the melted and cooled butter and mix until crumbly. Reserve half for topping.
Assembly
- Press half of the oat mixture into the bottom of the prepared pan.
- In another bowl, mix blueberries, lemon juice, sugar, and cornstarch until coated.
- Spread the blueberry mixture over the crust.
- Sprinkle the reserved crumble mixture on top of the blueberries.
Baking
- Bake in the oven for 40-50 minutes until topping is golden brown.
- Let cool completely in the pan on a wire rack before slicing.
Notes
Store leftovers in an airtight container for up to 3 days at room temperature or in the fridge for a week. They can be frozen for up to 3 months.
