Blueberry Oatmeal Bars

Ingredients
  

Base Ingredients
  • ½ cup all-purpose flour (or 1:1 gluten-free flour blend) Use King Arthur for best results.
  • 2 cups quick-cooking oats (gluten-free if needed)
  • ½ cup brown sugar (packed) Can substitute with coconut sugar.
  • ¼ tsp salt
  • ¾ cup butter (melted and cooled) Ensure it's at room temperature before melting.
Filling Ingredients
  • 2 cups fresh blueberries Can use frozen, thawed and drained.
  • ½ cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8-inch square baking pan by greasing it or lining with parchment paper.
  3. In a large bowl, combine oats, flour, brown sugar, and salt until well mixed.
  4. Pour in the melted and cooled butter and mix until crumbly. Reserve half for topping.
Assembly
  1. Press half of the oat mixture into the bottom of the prepared pan.
  2. In another bowl, mix blueberries, lemon juice, sugar, and cornstarch until coated.
  3. Spread the blueberry mixture over the crust.
  4. Sprinkle the reserved crumble mixture on top of the blueberries.
Baking
  1. Bake in the oven for 40-50 minutes until topping is golden brown.
  2. Let cool completely in the pan on a wire rack before slicing.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature or in the fridge for a week. They can be frozen for up to 3 months.
