  • 1 teaspoon Dijon mustard For a bit of zing.

Preparation
  1. Rinse your mixed salad greens under cold water and spin them dry in a salad spinner.
  2. Thinly slice the red onion and soak it in ice water for a few minutes to mellow the flavor. Drain before adding it to the salad.
  3. In a small bowl, whisk together the extra virgin olive oil, honey, balsamic vinegar, Dijon mustard, salt, and black pepper until well combined.
  4. In a large bowl, layer the greens, blueberries, sliced onion, crumbled feta, and pistachios. Drizzle with dressing and gently toss to combine.
  5. Plate the salad elegantly and enjoy immediately for the best flavor.

If you have leftovers, keep the components separate to maintain freshness. Prep ingredients a day in advance but leave dressing on the side, and always taste the dressing before tossing.
