Preparation
- In a blender, combine blueberries, maple syrup, and vanilla extract. Blend on high until pureed, about 30-60 seconds.
- In a mixing bowl, combine the blueberry mixture with Greek yogurt and stir gently until fully combined.
- Carefully fill your popsicle molds with the mixture, leaving a little space at the top.
- Insert popsicle sticks, cover, and freeze for at least 4 hours or overnight.
- Once frozen, let popsicles sit at room temperature for 5 minutes and then run warm water over the molds to unmold.
Notes
Store in an airtight container in the freezer for up to 2 weeks to prevent freezer burn.
