Preparation
  1. Preheat your oven to 350°F (175°C). A properly preheated oven is key to achieving that golden top.
  2. Grease a baking dish with butter. Use a generous amount to ensure nothing sticks.
  3. Cut the brioche bread into cubes and place them in the baking dish, aiming for pieces around 1-inch.
  4. In a mixing bowl, whisk together the eggs, heavy cream, milk, sugar, vanilla extract, cinnamon, and salt until well blended.
  5. Pour the egg mixture over the bread cubes, ensuring that all pieces are soaked. Press down gently to help them absorb the custard.
  6. Cover and refrigerate for at least 2 hours or overnight for the best results.
Baking
  1. Uncover and bake for 30-35 minutes until the top is golden brown and the casserole is set.
  2. Allow to cool slightly before serving.

Notes

For a more caramelized top, sprinkle a little extra sugar on the surface before baking. Leftovers can be stored for 3 days in an airtight container or frozen for up to 2 months.
