Preparation
- Preheat the broiler (or toaster oven) to high temperature – around 500°F (260°C).
- Slice the grapefruits in half, cutting horizontally for even cooking.
- Using a paring knife, cut around the segments of each half to loosen them from the membrane and rind.
- Arrange the grapefruit halves cut side up on a rimmed cookie sheet or baking dish.
- Spread coconut oil over the flesh, sprinkle with sugar, and ground ginger.
Broiling
- Broil for 4 to 7 minutes, checking every 2 minutes until the sugar caramelizes and the flesh is warm.
- If using shredded coconut, add after the first 2 minutes to toast.
- Sprinkle salt on top before serving.
Notes
Leftover broiled grapefruit can be stored in the fridge for up to two days. Reheat gently in the microwave prior to serving.
