Ingredients
  

For the Grapefruit
  • 2 pieces grapefruit Opt for red for added sweetness or yellow for a tangy kick.
  • 2 tablespoons sugar Can use coconut, brown, raw, or pure cane sugar.
  • 2 tablespoons coconut oil, vegan butter, or pure maple syrup Adds creaminess while balancing grapefruit acidity.
  • 1 teaspoon ground ginger or finely grated ginger Adds spicy warmth.
  • to taste pinch salt Just a sprinkle enhances flavors.
  • optional to taste shredded unsweetened coconut Add after the first two or three minutes for texture.
  • optional to taste cinnamon Adds warmth if desired.

Method
 

Preparation
  1. Preheat the broiler (or toaster oven) to high temperature – around 500°F (260°C).
  2. Slice the grapefruits in half, cutting horizontally for even cooking.
  3. Using a paring knife, cut around the segments of each half to loosen them from the membrane and rind.
  4. Arrange the grapefruit halves cut side up on a rimmed cookie sheet or baking dish.
  5. Spread coconut oil over the flesh, sprinkle with sugar, and ground ginger.
Broiling
  1. Broil for 4 to 7 minutes, checking every 2 minutes until the sugar caramelizes and the flesh is warm.
  2. If using shredded coconut, add after the first 2 minutes to toast.
  3. Sprinkle salt on top before serving.

Notes

Leftover broiled grapefruit can be stored in the fridge for up to two days. Reheat gently in the microwave prior to serving.
