For the Pie Crust
  • 1 pie crust 1 pie crust A homemade crust is recommended, but store-bought works too.
For the Filling
  • 1 cup 1 cup honey Opt for local, raw honey for best flavor.
  • 3 large eggs 3 large eggs Bring to room temperature for best results.
  • 1/2 cup 1/2 cup heavy cream Use high-quality cream for texture.
  • 1/4 cup 1/4 cup whole milk Whole milk recommended; alternatives can be used.
  • 1/4 teaspoon 1/4 teaspoon sea salt Balances the sweetness.
  • 1 teaspoon 1 teaspoon vanilla extract Use pure vanilla extract for richness.
  • 1 tablespoon 1 tablespoon unsalted butter Make sure it's at room temperature.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, heat the honey over medium heat until deep amber, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a large mixing bowl, whisk together the eggs, heavy cream, milk, sea salt, and vanilla extract until well combined.
  4. Gradually stir the cooled honey into the egg mixture, adding slowly to avoid cooking the eggs.
  5. Pour the mixture into the prepared pie crust carefully.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until the filling is just set with a slight jiggle in the center.
  2. Allow the pie to cool at room temperature for at least 1 hour before slicing.

Notes

If the pie's top darkens too much, cover it with aluminum foil during the last 10 minutes of baking. Store leftovers in the refrigerator for up to 3 days, or freeze for up to a month.
