- Line two large baking sheets with parchment paper and set aside.
- In a large bowl, add peanuts, chow mein noodles, and potato chips. Gently mix to combine.
- In a separate, microwave-safe bowl, melt butterscotch chips in 30-second intervals, stirring between each, until fully melted. Add creamy peanut butter and stir until smooth.
- Pour the melted mixture into the bowl with the crunchy ingredients. Mix until everything is well coated.
- Drop dollops of the mixture onto the parchment-lined baking sheets using a spoon or cookie scoop.
- If the mixture hardens, microwave for 15-20 seconds to loosen.
- Let cool until firm for 10-15 minutes before enjoying.
Notes
For storage, keep in an airtight container at room temperature for up to a week or refrigerate them to maintain firmness. They can also be made ahead of time and stored properly.
