  • 1 box white or vanilla cake mix Choose a quality brand like Duncan Hines or Betty Crocker.
  • 2 large eggs Use room-temperature eggs for the best mixing results.
  • 1/3 cup vegetable oil Can substitute with melted coconut oil.
  • 1 teaspoon vanilla extract Use pure vanilla extract for the best flavor.
  • as needed red and green sprinkles (or colored sugar) Use classic rainbow sprinkles for a fun twist!
  • 1/2 cup white chocolate chips or festive M&M’s Optional add-ins for extra sweetness.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly.
  2. In a mixing bowl, combine the cake mix, eggs, vegetable oil, and vanilla extract. Stir until a soft dough forms.
  3. Fold in half of the sprinkles and your choice of white chocolate chips or M&M’s.
  4. Using a tablespoon, scoop balls of dough and place them about 2 inches apart on the prepared baking sheet.
  5. Slightly flatten each dough ball and sprinkle a few extra sprinkles on top for decoration.
Baking
  1. Bake for 9-11 minutes, or until the edges are set and the centers still look slightly soft.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Serving
  1. Enjoy your cookies or package them beautifully for gifting.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week. You can also refrigerate or freeze them for longer storage.
