Ingredients
  

Salad Base
  • 2 large carrots, grated Try using organic for a sweeter flavor
  • 2 pieces apples, cored and diced Fuji or Honeycrisp for sweetness
  • 1/4 cup raisins Alternative: dried cranberries for a tart twist
  • 1/4 cup chopped walnuts Optional; pecans work wonderfully, too
Dressing
  • 1/2 cup plain yogurt or mayonnaise Choose yogurt for a lighter dressing
  • 1 tablespoon honey or maple syrup Taste and adjust according to sweetness preference
  • 1 tablespoon lemon juice Freshly squeezed for the best flavor
  • to taste Salt and pepper Adjust according to preference

Preparation
  1. In a large mixing bowl, combine the grated carrots, diced apples, raisins, and walnuts (if using). Toss gently to mix the ingredients thoroughly.
  2. In a separate bowl, whisk together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, salt, and pepper until smooth.
  3. Pour the dressing over the salad mixture and gently toss to coat evenly.
  4. Cover with plastic wrap and chill in the refrigerator for about 30 minutes before serving.
  5. Toss again before serving fresh as a side dish or light meal.

Notes

For best results, use fresh, seasonal produce. The flavor will shine through! Store leftovers in an airtight container in the fridge for 2-3 days.
