- In a large mixing bowl, combine the grated carrots, diced apples, raisins, and walnuts (if using). Toss gently to mix the ingredients thoroughly.
- In a separate bowl, whisk together the yogurt (or mayonnaise), honey (or maple syrup), lemon juice, salt, and pepper until smooth.
- Pour the dressing over the salad mixture and gently toss to coat evenly.
- Cover with plastic wrap and chill in the refrigerator for about 30 minutes before serving.
- Toss again before serving fresh as a side dish or light meal.
