  • 7 to 9 large large carrots Choose firm, vibrant carrots for the sweetest juice. Organic is best if you can find them.
  • 1/4 pineapple fresh pineapple (about 1 cup, flesh only) Opt for fresh pineapple for maximum flavor; canned versions can be used in a pinch but might contain added sugars.
  • 1 inch knob ginger, peeled Fresh ginger adds the perfect zing. Avoid dried ginger, as it won't give the same lively flavor.

Preparation
  1. Scrub and rinse the carrots thoroughly under running water. If the tops are looking clean, feel free to skip cutting them; otherwise, trim off the very top 1/2 inch or so.
  2. Using a juicer, feed the carrots, pineapple, and peeled ginger through the chute. If you’re using a blender, blend everything with a splash of water, then strain through a cheesecloth or fine mesh sieve for a smoother texture.
  3. Pour your juice into a glass and feel free to give it a good stir before sipping!

Notes

Juice is best consumed immediately but can be stored in an airtight container for up to 48 hours. To retain maximum freshness, fill the container to the top to minimize air exposure. Avoid using overly ripe pineapple, as it can lead to too much acidity in the juice.
