Preparation
- Preheat your oven to 375°F (190°C) for pre-baking.
- In a heavy-bottomed cast iron skillet, melt butter over medium heat. Add the sliced onions and sauté until soft and caramelized, about 15-20 minutes.
- In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth and just combined.
- Stir in the sautéed onions and grated cheddar cheese, mixing thoroughly.
- Pour the onion mixture into the prepared pie crust, smoothing the top with a spatula.
Baking
- Bake for 30-35 minutes, or until the custard is set and the top is golden.
- Allow the pie to cool slightly before slicing.
