Ingredients
  

For the Pie
  • 1 piece pre-made pie crust
  • 2 large Vidalia onions, thinly sliced
  • 1 cup sharp cheddar cheese, grated
  • 3 large eggs
  • 1 cup heavy cream
  • to taste Salt and pepper
  • 2 tablespoons butter
  • 1 tablespoon fresh thyme (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) for pre-baking.
  2. In a heavy-bottomed cast iron skillet, melt butter over medium heat. Add the sliced onions and sauté until soft and caramelized, about 15-20 minutes.
  3. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until smooth and just combined.
  4. Stir in the sautéed onions and grated cheddar cheese, mixing thoroughly.
  5. Pour the onion mixture into the prepared pie crust, smoothing the top with a spatula.
Baking
  1. Bake for 30-35 minutes, or until the custard is set and the top is golden.
  2. Allow the pie to cool slightly before slicing.

Notes

Serve with a light green salad and pair with a crisp white wine or iced tea. Can be made vegan or gluten-free with substitutions.
