Preparation
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
- In a medium bowl, combine graham cracker crumbs and melted butter. Press this mixture evenly into the bottom of the prepared pan.
Filling
- In a large mixing bowl, blend softened cream cheese with sugar and vanilla until silky and smooth.
- Add the eggs one at a time, mixing well after each addition.
- Mix in pumpkin puree, ground spices, and salt until fully incorporated.
- Pour the cheesecake filling over the crust in the pan, spreading it evenly.
Baking and Cooling
- Place the cheesecake in the preheated oven and bake for about 1 hour.
- Turn off the oven and let the cheesecake sit inside for 1 hour.
- Let it cool completely on a wire rack before transferring it to the fridge.
- Chill in the refrigerator for at least 4 hours or overnight.
Serving
- Top with sour cream or whipped cream if desired before serving.

For a smooth texture, make sure all cream cheese and other ingredients are at room temperature. Avoid overmixing to minimize cracks.
