Preparation
- Preheat a large skillet over medium heat for about 2 minutes.
- Crumble the breakfast sausage into the skillet and cook for about 5-7 minutes until browned.
- Whisk the eggs in a bowl with salt and pepper.
- Remove the sausage from the skillet, draining excess grease if needed.
- In the same skillet, add the diced bell pepper and onion, cooking until softened (3-4 minutes).
- Add the whisked eggs to the skillet with vegetables and gently scramble until set.
- Stir in the cooked sausage and shredded cheddar cheese until melted.
- Stir in the chopped cilantro and remove from heat.
- Assemble the burritos by adding the mixture to a tortilla, folding sides in, and rolling tightly.
- Serve immediately with salsa or wrap for an on-the-go breakfast.
Notes
To store, wrap burritos in foil for up to 3 days in the fridge or freeze for 3 months. Reheat directly from the freezer.
