  • 6 large eggs Use farm-fresh eggs for richer flavor. Room temperature eggs give better volume.
  • 1 pound breakfast sausage Johnsonville or Aidells recommended. Substitute with turkey or plant-based sausage for a lighter option.
  • 1 cup shredded cheddar cheese Sharp cheddar preferred; mix in pepper jack for spice.
  • 1/2 cup diced bell pepper Any color works.
  • 1/4 cup diced onion Sweet onions are preferable.
  • 1/4 cup chopped fresh cilantro Can substitute with parsley or green onions.
  • 1/2 teaspoon salt Adjust according to taste.
  • 1/4 teaspoon black pepper Freshly cracked recommended.
  • 6 large flour tortillas Use burrito-sized, preferably freshly made.

Method
 

Preparation
  1. Preheat a large skillet over medium heat for about 2 minutes.
  2. Crumble the breakfast sausage into the skillet and cook for about 5-7 minutes until browned.
  3. Whisk the eggs in a bowl with salt and pepper.
  4. Remove the sausage from the skillet, draining excess grease if needed.
  5. In the same skillet, add the diced bell pepper and onion, cooking until softened (3-4 minutes).
  6. Add the whisked eggs to the skillet with vegetables and gently scramble until set.
  7. Stir in the cooked sausage and shredded cheddar cheese until melted.
  8. Stir in the chopped cilantro and remove from heat.
  9. Assemble the burritos by adding the mixture to a tortilla, folding sides in, and rolling tightly.
  10. Serve immediately with salsa or wrap for an on-the-go breakfast.

Notes

To store, wrap burritos in foil for up to 3 days in the fridge or freeze for 3 months. Reheat directly from the freezer.
