Ingredients
  

For the filling
  • 1 lb ground beef Lean beef recommended for less grease
  • 1.25 tsp salt Sea salt enhances the flavor
  • 0.75 tsp black pepper
  • 2.5 tbsp butter Room temperature for easy melting
  • 1 medium onion, diced Yellow onion works best
  • 1 medium green bell pepper, diced Red bell pepper can be used for a sweeter flavor
  • 0.5 tsp garlic powder Fresh garlic adds even more depth
  • 0.25 tsp smoked paprika For a hint of smokiness
  • 1 tbsp Worcestershire sauce
  • 0.5 cup beef broth Homemade or low-sodium store-bought
  • 1 tbsp cornstarch For thickening
  • 4 slices provolone cheese Or cheese of your choice
  • 4 rolls toasted with a bit of butter Substitute with gluten-free rolls if desired

Preparation
  1. Dice the onion and green bell pepper and set aside. Toast the rolls lightly brushed with butter in a skillet or oven until golden brown—about 3-5 minutes on medium heat.
  2. Heat a skillet over medium-high heat, add the ground beef, season with salt and pepper, and cook until browned—around 5-7 minutes. Drain the excess grease.
  3. In the same skillet, reduce the heat to medium and melt the butter. Add the diced onion and green bell pepper, sautéing until softened and caramelized—about 4-5 minutes.
  4. Return the browned beef to the skillet, sprinkling in garlic powder, smoked paprika, Worcestershire sauce, and beef broth. Simmer for 1 minute.
  5. In a small bowl, create a cornstarch slurry with a splash of water. Add it to the beef mixture, stirring until the sauce thickens (about 2-3 minutes). Adjust with additional broth or water if needed.
  6. Top the mixture with provolone cheese, covering it with a lid to help it melt—around 1-2 minutes.
  7. Spoon the cheesy mixture generously onto the toasted rolls and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Reheat gently in the microwave or skillet. Quality ingredients make a significant difference in flavor. You can cook the beef mixture ahead of time and store it in the fridge.
