- Dice the onion and green bell pepper and set aside. Toast the rolls lightly brushed with butter in a skillet or oven until golden brown—about 3-5 minutes on medium heat.
- Heat a skillet over medium-high heat, add the ground beef, season with salt and pepper, and cook until browned—around 5-7 minutes. Drain the excess grease.
- In the same skillet, reduce the heat to medium and melt the butter. Add the diced onion and green bell pepper, sautéing until softened and caramelized—about 4-5 minutes.
- Return the browned beef to the skillet, sprinkling in garlic powder, smoked paprika, Worcestershire sauce, and beef broth. Simmer for 1 minute.
- In a small bowl, create a cornstarch slurry with a splash of water. Add it to the beef mixture, stirring until the sauce thickens (about 2-3 minutes). Adjust with additional broth or water if needed.
- Top the mixture with provolone cheese, covering it with a lid to help it melt—around 1-2 minutes.
- Spoon the cheesy mixture generously onto the toasted rolls and serve hot.
