Preparation
- Preheat your oven to 400°F (200°C) and spray a 9-inch oven-safe skillet with cooking spray.
- In a medium bowl, combine cream cheese, butter, and granulated sugar. Beat on medium speed until smooth and creamy, about 2-3 minutes. Mix in vanilla extract.
- Lightly flour your work surface and roll out the thawed puff pastry into a 9x12-inch rectangle, 1/8 inch thick.
- Spread the cream cheese mixture evenly over the pastry, leaving a 1-inch border.
- Spoon the cherry pie filling evenly over the cream cheese layer.
- Dampen the edges with a little water, roll the pastry into a tight log, and slice into 6 equal pieces.
Baking
- Arrange pinwheels cut-side up in the greased skillet and brush each with the beaten egg.
- Bake for 30-38 minutes or until golden brown and puffed up. If they brown too quickly, cover lightly with foil.
- Allow to cool slightly, then whisk together confectioners sugar and milk to create a glaze. Drizzle generously over warm pinwheels.
