  • 1/2 cup unsalted butter, melted ensure it’s at room temperature for easy mixing
  • 1 large egg essential for binding
  • 1 teaspoon vanilla extract pure is best
  • 1/4 teaspoon salt to balance the sweetness
  • 1/2 teaspoon baking soda for that perfect lift

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the melted butter, brown sugar, granulated sugar, and egg until smooth and creamy.
  3. Stir in the vanilla extract.
  4. In another bowl, combine the rolled oats, flour, salt, and baking soda. Mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture and mix well.
  6. Drop teaspoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden brown.
  2. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Don't overmix the dough; this can make the cookies tough. For a chewier cookie, remove them from the oven at 10 minutes while they're still slightly under-baked.
