Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the melted butter, brown sugar, granulated sugar, and egg until smooth and creamy.
- Stir in the vanilla extract.
- In another bowl, combine the rolled oats, flour, salt, and baking soda. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture and mix well.
- Drop teaspoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Don't overmix the dough; this can make the cookies tough. For a chewier cookie, remove them from the oven at 10 minutes while they're still slightly under-baked.
