- Pour the almond milk into a jar or container. Add the chia seeds, honey, and ground cinnamon.
- Use a whisk or a fork to stir vigorously for about 1 minute to ensure that all the chia seeds are incorporated.
- Let the mixture sit for 2-3 minutes, then stir again thoroughly.
- Cover the jar and place it in the refrigerator for at least 2 hours, but overnight is best.
- While the pudding is chilling, hull and slice the fresh strawberries.
- When ready to serve, stir the chilled pudding to loosen it slightly, top with strawberries, and serve cold.
Notes
Keep leftovers in an airtight container in the fridge for up to 5 days. This recipe is great for meal prep.
