  • 2 cups cooked chicken, shredded Rotisserie chicken works well.
  • 2 cups ricotta cheese Whole milk ricotta enhances creaminess.
  • 2 cups mozzarella cheese, shredded Fresh mozzarella for best results.
  • 1 cup Parmesan cheese, grated For topping.
  • 3 cups marinara sauce Quality sauce enhances flavor.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a mixing bowl, combine the shredded chicken, ricotta cheese, Italian seasoning, salt, and pepper. Mix until well blended.
Layering and Baking
  1. In a 9x13 inch baking dish, spread a layer of marinara sauce on the bottom.
  2. Place 3 lasagna noodles on top of the sauce.
  3. Spread half of the chicken and ricotta mixture over the noodles, then layer 1 cup of marinara sauce and 1 cup of mozzarella cheese.
  4. Repeat the layers with remaining chicken mixture, marinara sauce, and mozzarella cheese.
  5. Sprinkle grated Parmesan cheese over the final layer.
  6. Cover the dish with foil and bake for 25 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving. Garnish with fresh basil if desired.

Notes

Consider adding chopped spinach or zucchini to the ricotta for extra nutrients. Store in the fridge for up to 4-5 days, or freeze for up to 3 months.
