Preparation
- Preheat your oven to 350°F (175°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a mixing bowl, combine the shredded chicken, ricotta cheese, Italian seasoning, salt, and pepper. Mix until well blended.
Layering and Baking
- In a 9x13 inch baking dish, spread a layer of marinara sauce on the bottom.
- Place 3 lasagna noodles on top of the sauce.
- Spread half of the chicken and ricotta mixture over the noodles, then layer 1 cup of marinara sauce and 1 cup of mozzarella cheese.
- Repeat the layers with remaining chicken mixture, marinara sauce, and mozzarella cheese.
- Sprinkle grated Parmesan cheese over the final layer.
- Cover the dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Garnish with fresh basil if desired.
Notes
Consider adding chopped spinach or zucchini to the ricotta for extra nutrients. Store in the fridge for up to 4-5 days, or freeze for up to 3 months.
