Preparation
  1. Season the chicken cutlets generously with salt and pepper, ensuring they are well-coated for maximum flavor.
  2. Preheat your air fryer to 380°F (193°C). Place the seasoned cutlets in the basket, ensuring they do not overlap. Cook for about 12-15 minutes, flipping halfway through.
  3. In a mixing bowl, combine cherry tomatoes, finely sliced red onion, fresh mozzarella, and chopped basil. Drizzle with balsamic vinegar and season with salt and pepper. Gently toss all ingredients.
Assembly
  1. Once the chicken is cooked, top each cutlet with the salad mixture, allowing some tomatoes and cheese to spill over for presentation.
  2. Finish by drizzling with balsamic glaze before serving.
