For the Lemon Dressing

  1. In a large bowl, combine the chickpeas, diced avocado, diced cucumber, red onion, and chopped parsley. Make sure not to mush the avocado; you want those beautiful chunks!
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, black pepper, and garlic powder until it’s well combined. A whisk makes this easy, but a fork can do the trick too!
  3. Pour the dressing over the salad and gently toss to coat all ingredients evenly. The avocado will start to blend with the dressing, creating a creamy consistency that tastes heavenly.
  4. For the best flavor, let the salad sit for 10 minutes so the ingredients meld together beautifully. In a pinch? You can serve it right away, but letting it rest enhances everything.
