  • 1 medium jalapeƱo (seeded and chopped, optional) Adjust amount based on desired heat level.
  • 3/4 cup extra virgin olive oil Use high-quality for best results.
  • 1/4 cup red wine vinegar Can replace with apple cider vinegar for variation.
  • 3-4 cloves garlic (fresh is best!) Fresh garlic is essential for flavor.
  • 1/4 tsp red pepper flakes (optional) Adjust to taste for extra heat.
  • To taste Salt Adjust according to preference.
  • To taste Freshly ground black pepper Add based on taste preference.

Preparation
  1. Put all ingredients into a blender or food processor and puree until smooth, about 30-60 seconds.
  2. Taste the chimichurri and adjust the flavors, adding more vinegar or salt if needed.
  3. Transfer to a jar or airtight container and let sit at room temperature for 2-3 hours to allow flavors to meld.

Notes

For a chunkier texture, consider hand-chopping the ingredients. This sauce is best enjoyed fresh but can be refrigerated for up to 2 days. For long-term storage, it can be frozen in ice cube trays.
