  • 3/4 cup cottage cheese Blend for a smoother texture if desired.
  • 1/4 cup honey Natural sweetener complementing bananas.
  • 2 tsp vanilla extract Opt for pure vanilla for best flavor.
Dry Ingredients
  • 3/4 cup cacao powder Use unsweetened dark cocoa for richness.
  • 2 tsp baking powder To provide lift to the bars.
  • 1/4 tsp salt Enhances overall flavor.
Mix-Ins
  • 1/3 cup chocolate chips Semi-sweet or dark, based on preference.
  • flaky sea salt For sprinkling on top before serving.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F. Line a 9x13 inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, peel the bananas, then add the eggs, cottage cheese, honey, and vanilla extract. Blend until smooth.
  3. In a separate bowl, whisk together cacao powder, baking powder, and salt.
  4. Gradually add the dry mixture to the wet ingredients. Fold gently until just combined.
  5. Fold in chocolate chips until evenly distributed.
  6. Pour the batter into the prepared baking pan and sprinkle remaining chocolate chips on top.
Baking
  1. Bake in the preheated oven for 35 to 40 minutes, until the center is set but slightly jiggly.
Cooling & Serving
  1. Allow the bars to cool for at least 30 minutes in the pan. Sprinkle with flaky sea salt before slicing into squares.

Notes

Store in an airtight container for up to 3 days at room temperature, or refrigerate for up to 1 week. They freeze well for up to 3 months.
