Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes).
- Add in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
Baking
- Gradually mix in the dry ingredients alternately with the milk, starting and ending with the dry ingredients.
- Gently fold in the dark chocolate chips and tart cherries.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60-70 minutes, or until a toothpick inserted comes out clean. Check at the 60-minute mark.
- Let the loaf cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
