Preparation
- Preheat your oven to 350°F (175°C) and line a 13x9" pan with parchment paper for easy removal.
- Freeze the cookie dough for a few hours to make slicing easier.
Making the Crust
- Slice half of the frozen dough into 1/4" pieces and form an even layer in the prepared pan.
- Bake the crust for about 10 minutes, or until it’s lightly golden.
Preparing the Cheesecake Filling
- In a mixing bowl, beat the cream cheese, egg, sugar, and vanilla until the mixture is smooth and creamy.
- Pour and spread the cheesecake mixture evenly over the hot crust.
Adding Toppings
- Top with the remaining cookie dough slices, gently pressing down to ensure they adhere.
Baking
- Bake for 35-40 minutes, until the edges are set and the center feels slightly jiggly.
Cooling
- Allow it to cool to room temperature, then refrigerate for at least 2 hours before slicing into bars.
Notes
For serving, cut the bars into even squares and serve them on a decorative platter. They pair perfectly with a glass of milk or a scoop of vanilla ice cream.
