- In a large bowl, combine the grated zucchini, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract until well mixed. The mixture should feel light and airy.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon until evenly blended.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are perfectly fine.
- Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
