Preparation
  1. In a large bowl, whisk together the dough ingredients: all-purpose flour, cocoa powder, sugar, instant yeast, and salt until evenly mixed.
  2. In a small saucepan, heat milk and melted butter until warm, then pour it over the dry ingredients along with the egg. Mix until combined and a soft dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about an hour, or until it doubles in size.
Baking
  1. Gently punch down the dough and roll it out to a rectangle, approximately 12x18 inches. Spread with melted butter, then sprinkle with filling ingredients: cinnamon, brown sugar, and any remaining cocoa powder.
  2. Starting from the long edge, tightly roll the dough into a log and slice it into about 12 rolls.
  3. Place the rolls in a greased baking dish and let them rise for another 30 minutes.
  4. Preheat the oven to 350°F (175°C) and bake for about 25-30 minutes, until golden brown.
  5. While the rolls are baking, beat together the frosting ingredients until smooth and creamy.
  6. Once the rolls are out of the oven, let them cool slightly before spreading the frosting generously over the top.

Notes

Chef’s Tip: Ensure your butter and egg are at room temperature for the best mixing and rise. For extra gooeyness, cover the rolls while they cool to keep them warm and soft.
