Preparation
- In a large bowl, whisk together the dough ingredients: all-purpose flour, cocoa powder, sugar, instant yeast, and salt until evenly mixed.
- In a small saucepan, heat milk and melted butter until warm, then pour it over the dry ingredients along with the egg. Mix until combined and a soft dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about an hour, or until it doubles in size.
Baking
- Gently punch down the dough and roll it out to a rectangle, approximately 12x18 inches. Spread with melted butter, then sprinkle with filling ingredients: cinnamon, brown sugar, and any remaining cocoa powder.
- Starting from the long edge, tightly roll the dough into a log and slice it into about 12 rolls.
- Place the rolls in a greased baking dish and let them rise for another 30 minutes.
- Preheat the oven to 350°F (175°C) and bake for about 25-30 minutes, until golden brown.
- While the rolls are baking, beat together the frosting ingredients until smooth and creamy.
- Once the rolls are out of the oven, let them cool slightly before spreading the frosting generously over the top.
Notes
Chef’s Tip: Ensure your butter and egg are at room temperature for the best mixing and rise. For extra gooeyness, cover the rolls while they cool to keep them warm and soft.
