For the Chocolate Topping

Preparation
  1. In a medium bowl, combine the yogurt, peanut butter, and maple syrup, stirring until well blended. Use a whisk for a fluffier texture.
  2. Gently fold in the chopped peanuts and sea salt until evenly distributed.
  3. Divide the mixture among 4 containers, packing gently to avoid creating air gaps.
  4. In a small bowl, melt the chocolate chips with the coconut oil in the microwave in 30-second intervals, stirring between each.
  5. Once melted, pour the chocolate over the yogurt mixture in containers, making sure to cover them well.
  6. Refrigerate for 30 to 60 minutes until the chocolate is set.

Notes

These cups can be stored in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze them without the chocolate and add it when ready to enjoy. Consider topping with extra chopped nuts, a sprinkle of sea salt, or fresh berries before serving for an extra gourmet touch.
