Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray.
  2. In a large mixing bowl, combine the grated zucchini, eggs, vegetable oil, and vanilla extract.
  3. In another bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients into the wet mixture, stirring gently until just combined.
  5. If desired, fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring to a wire rack for complete cooling.

Notes

Serve with a sprinkle of powdered sugar on top. Pairs beautifully with coffee or milk. Can substitute for whole wheat flour for added nutrition.
