Preparation
- Preheat your oven to 350°F (175°C).
- Line a 9x9-inch baking pan with parchment paper for easy removal.
Mixing
- Grate the zucchini, then place it in a clean kitchen towel or cheesecloth, and squeeze out excess moisture.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- Fold the grated zucchini into the butter-sugar mixture, then gradually add the dry ingredients, stirring until just combined.
- Gently fold in the chocolate chips.
Baking
- Pour the batter into the prepared pan, smoothing the top.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the brownies to cool completely in the pan before slicing.
Serving
- Top with chocolate ganache or a dusting of powdered sugar before serving.
Notes
Squeeze excess moisture from zucchini to prevent soggy brownies. Avoid overmixing to prevent dense texture.
