Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a 9x9-inch baking pan with parchment paper for easy removal.
Mixing
  1. Grate the zucchini, then place it in a clean kitchen towel or cheesecloth, and squeeze out excess moisture.
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Fold the grated zucchini into the butter-sugar mixture, then gradually add the dry ingredients, stirring until just combined.
  6. Gently fold in the chocolate chips.
Baking
  1. Pour the batter into the prepared pan, smoothing the top.
  2. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  3. Allow the brownies to cool completely in the pan before slicing.
Serving
  1. Top with chocolate ganache or a dusting of powdered sugar before serving.
