Ingredients
  

For the Cake
  • 1 box white cake mix (including necessary eggs, water, and oil) Use room temperature eggs for better mixing.
  • 3 large eggs For better emulsification.
  • 1 cup water For more moisture.
  • cup vegetable oil or melted butter Use melted butter for richness.
For the Jello
  • ½ box strawberry Jello gelatin (3-ounce)
  • ½ box lime Jello gelatin (3-ounce)
  • 1 cup boiling water (divided) This is crucial for dissolving the gelatin.
For the Topping
  • 1 tub Cool Whip whipped topping (8-ounce), thawed Give it at least 4 hours in the fridge to defrost.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan to prevent sticking.
  2. In a large mixing bowl, combine the white cake mix, eggs, water, and oil (or butter). Mix on medium speed for about 2 minutes until smooth and well blended.
  3. Pour the batter into your prepared pan, spreading it evenly. Bake for 28–30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10–15 minutes.
Poking and Jello Preparation
  1. Using the handle of a wooden spoon, poke holes evenly across the top of the cake, about 1 inch apart.
  2. In two small bowls, dissolve the strawberry and lime Jello separately in ½ cup of boiling water. Stir vigorously until completely dissolved.
  3. Alternating between the two flavors, spoon the gelatin mixtures over the cake, making sure to fill the holes.
Chilling and Frosting
  1. Cover the cake and refrigerate for at least 2 hours to let the Jello fully set and the cake cool down.
  2. Once chilled, spread the thawed Cool Whip evenly over the top of the cake and add a sprinkle of festive holiday sprinkles for decoration.
Serving
  1. Slice into squares, serve, and enjoy with your loved ones.

Notes

Store covered in the refrigerator for up to 3 days or freeze for up to a month. The gelatin may start to separate slightly over time, but it will still taste great!
