Ingredients
  

For the Pizza Bites
  • 2 tubes refrigerated pizza dough Pillsbury recommended for reliable texture
  • 1.5 cups shredded mozzarella cheese Good quality cheese melts beautifully
  • 0.5 cup mini pepperoni or chopped salami Applegate Naturals for organic options
  • 0.25 cup grated Parmesan Freshly grated gives the best flavor
  • 0.5 tsp garlic powder
  • 0.5 tsp Italian seasoning
  • 1 unit egg For egg wash
  • 2 tbsp melted butter At room temperature for easier mixing
Optional Festive Toppings
  • to taste Chopped basil, crushed red pepper, or colorful sliced olives/bell peppers Feel free to customize

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the pizza dough on a lightly floured surface and cut it into small squares, about 2x2 inches.
  3. Place a pinch of mozzarella cheese and a few bits of pepperoni or your desired toppings in the center of each square, being careful not to overstuff.
  4. Fold the corners of the squares together and pinch to seal, forming little balls.
  5. Arrange the balls into festive shapes on the prepared baking sheet.
  6. Whisk together the egg and a tablespoon of water, then brush this mixture gently over each ball.
Baking
  1. Bake for 15-18 minutes, or until golden brown and bubbling inside.
  2. Brush with melted butter and sprinkle with garlic powder, Italian seasoning, grated Parmesan, and optional herbs.
Serving
  1. Serve warm with marinara or pesto for dipping.

Notes

Store leftovers in an airtight container for up to 3-4 days, or freeze unbaked bites for up to a month. They can be assembled a day in advance and refrigerated.
